Hummingbird Sweet Bread
Happy Springtime Friends! It is drizzling a little bit outside, but my little bears and I are making the most of it! We played outside on the swings, then came inside to make a treat! We wanted something that tasted sunny, and reminded us of Springtime. This Hummingbird Sweet Bread is the absolute perfect sunny, Springtime treat!
The list of ingredients for this Hummingbird Sweet Bread are some of my favorites alone, but when added together, they are divine!
3 medium bananas, mashed until smooth
8 ounces of crushed Pineapple
1 cup shredded coconut
1/2 cup white chocolate chips
1/2 cup chopped pecans, optional
1 cup white sugar
2 cups flour
1 stick of butter, melted
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon of baking soda
Grab your helpers! It's fun working in the kitchen with little bears! They enjoy helping in the kitchen, and it is a great way to make memories!
In your mixer, combine the wet ingredients; mashed bananas, crushed pineapple, melted butter, eggs, and vanilla.
Once the wet ingredients are combined, add in the dry ingredients; flour, sugar, baking soda, and salt, mix until combined.
Now, fold in the white chocolate chips, pecans (optional), and shredded coconut.
Pour the Hummingbird Sweet Bread batter into two greased ceramic, or glass, bread pans. Do not use metal bread pans, the bread will not bake correctly.
Now bake this Hummingbird Sweet Bread at 325 degrees for one hour. It will come out perfectly!

Pineapple Cream Cheese Frosting:
4 ounces of cream cheese
3 cups powdered sugar
1/4 cup crushed pineapple
Cream the ingredients in your mixer until smooth!
