Mojito Lime Grilled Chicken Sandwiches with Pineapple Avocado Salsa

I know that I've said this before, but I love making a good dinner on Sunday! This Sunday was no exception! We went all out, and made Mojito Lime Grilled Chicken Sandwiches, with Pineapple Avocado Salsa! Oh my goodness, this is one of my favorite dinners! It's easy to prepare, and easy to clean up. Also, you don't have to turn on the oven! Let's get started!

First Prepare the Pineapple Avocado Salsa!

You will need, Ingredients:

1 Can of Pineapple tidbits, drained

3 acocados, peeled and diced

1/2 an onion, diced tiny

1-2 tablespoons of Mojito Lime Marinade seasoning

The juice from one lime, squeezed

salt to taste

In a bowl mix together the pineapple, avocado, onion, lime juice, and seasonings. Set aside in the fridge, while you prepare the chicken.

For the Mojito Lime Chicken Sandwiches,

You will need, Ingredients:

4 Chicken breasts, pounded out with a meat mallet.

I don't have a meat mallet, so used a rolling pin. Haha!

1 packet of Mojito Lime Marinade Seasoning

4 Chibata Buns


4 Slices of Provolone Cheese

Liberally season the Chicken Breasts with the Mojito Lime Seasoning. Grill the chicken breasts for about 3-4 minutes on each side, until cooked through, you don't want pink chicken! Daddy Bear grilled the Chicken for us, and of course our little bears were close by! Yes, they are in their jammies, don't judge me, haha! It's fun to put jammies on after Church!

After the chicken is grilled, it's time to assemble!

Spread a layer of mayonnaise on the buns, add a juicy grilled chicken breast, then top with a slice of provolone cheese, and smother with the delicious Pineapple Avocado Salsa!
