Texas BBQ Baked Potato
Living in Texas, we learned how to cook and we learned how to eat! If you have a husband with a big appetite, your going to love this recipe. This easily falls into my favorites category! It has all my favorite things, barbecue sauce, cheese, potato, and pulled pork. I made this for some friends, they loved it as much as we did. No surprise there!
Grill Mates Brown Sugar Bourbon seasoning
Baking Potatoes- one for each person
1 Can of Pinto Beans
Preheat your oven to 325 degrees. Add that big hunk of meat to your baking dish. You can use pork roasts, shoulder, or butt. Don't forget your seasonings. I used a packet of Grill Mates, Brown Sugar Bourbon seasoning. Let that slow cook in your oven for 4 hours.
Little tip, you don't need to add any kind of liquid to pork because it will release its own flavorful liquid as it slow cooks. Adding extra liquid could boil it, and give it a boiled texture. Also, wait to add in your BBQ sauce. I've found that some sauces do not slow cook very well, and end up with a weird taste after slow cooking.
Bake the potatoes until they are soft, and a fork easily pierces them. Cut the potatoes lengthwise. Add a little salt, butter and sour cream to each potato. Mix it up with a fork.
After the Pork is Baked, shred it, and add the BBQ sauce. Use as much BBQ sauce as you like!
Next, scoop some beans on each potato, followed by a big helping of pulled pork on top. Oh Yum!!!
Sprinkle some shredded cheese on top, it pulls everything together! Place the loaded potatoes back in the oven to broil. Let them cook for one minute or two. Never walk away from something your broiling, thats just asking for it to burn, it never fails!
