Cheesy Cauliflower Potato Chowder
The last couple of days have been cloudy and rainy, which I believe is perfect soup and chowder weather! So for dinner I present Cheesy Cauliflower Potato Chowder! Like most of my recipes, it’s easy, and quick to prepare!
Here’s what you need,
2 cups whole milk
1/2 cup butter
1-2 tablespoons of flour, depending on thickness you like
1 1/2 cup potatoes, peeled and diced small
1 head of cauliflower, diced small
1 1/2 cups sharp cheddar cheese
1 can corn with juice
1 carrot, peeled and diced
1 block cream cheese
Garlic powder, onion powder, salt and pepper to taste
In your pot, melt the butter, then add in the potatoes, and sauté a minute. Then add in the carrot, and cauliflower, sauté a bit more. Now add in the milk, and can of corn with juice. Sprinkle the flour on top, and add in the seasonings. Once it’s Mixted together, add in the cream cheese, and shredded cheese.
Let it simmer until it’s thickened, and the veggies are tender!
This Cheesy Cauliflower Potato Chowder is extra yummy served with breadsticks, and garnished with extra cheese. My little bears like to have goldfish crackers on top! Hope you enjoy!
