Three Cheese Lasagna for a Crowd!
Tonight we had Daddy Bear's whole family over! It was so great to visit with everyone, and enjoy a delicious dinner together! I wanted to make a meal that would feed a lot of people, and a meal I could make ahead of time. That way there wouldn't be dirty dishes when family arrived. So I made my special Three Cheese Lasagna!
This recipe makes 2 Casserole dishes!
Feel free to half the recipe!
You will need,
2 pounds of hamburger
64 oz of your favorite marinara sauce
2 large eggs
4 cups ricotta cheese
2 cups Parmesan cheese, shredded
2 cups Mozzarella cheese, shredded
24 Lasagna noodles
1 package fresh sliced mushrooms
1 tablespoon brown sugar
Oregano and basil to taste, I used a teaspoon of each
Salt and pepper to taste
Boil the Lasagna noodles until just under al dente. Drain and set aside. They will finish cooking in the oven! I drizzle a little olive oil on them, to keep from sticking.
In a pan, brown the hamburger meat, and Mushrooms. Season with 1 tablespoon brown sugar, and salt and pepper to taste.
Once browned, add in the marinara sauce, and let simmer on low heat.
While the sauce simmers,
In a bowl combine the eggs, ricotta cheese, 1 cup of mozzarella, and 1 cup Parmesan cheese. Season with salt, pepper, oregano, and basil to taste. Mix, and set aside.
Now that everything is prepared, it's ready to assemble! In a greased Casserole dish, layer sauce, noodles, cheese mixture, and sauce again! Fill both dishes until the ingredients are all used up! Sprinkle the tops of the Lasagnas with the leftover shredded cheeses, 1 cup of mozzarella, and 1 cup shredded Parmesan cheese.
Bake at 350 degrees at 45 minutes, for 2 Lasagnas, and 30 minutes for 1 lasagna.
After Church I assembled the Lasagnas, covered them in plastic wrap, and placed them in the fridge. Then I put them in the oven 30 minutes before family arrived. This Three Cheese Lasagna was perfect for our get together, and received lots of compliments! 😊 I love family get togethers!
