Tex-Mex Taco Lasagna
Happy Fall Y'all! I'm loving this crisp weather! It's the perfect time of year for Lasagna! I have a delicious and different recipe for you to try out. Let's mix up the norm! It's Tex-Mex Taco Lasagna! It's just the perfect easy meal for family, and guests! You are going to love it!
Here's what you need,
1 pound of ground hamburger meat
9 Lasagna noodles, cooked just under done, they'll finish cooking in the oven!
1 packet of taco seasoning
1 1/2 cups of ricotta cheese
2 cups Monterey Jack cheese
1 can of corn, with juice
1 can of black olives, drained and chopped
2 cans of Mexican tomatoes with green chilies
1/3 - 1/2 cup of Sriracha, depending on your spice level!
1/4 cup mixture of green onion and cilantro, washed and chopped
1 cup shredded Monterey Jack cheese for the topping
1 Fresh tomato chopped for garnish
1 avocado peeled and chopped for garnish
Alright, let's get started!
Brown your hamburger meat with the taco seasoning packet, and salt and pepper!
Then add in the can of corn, the chopped olives, the 2 cans of Mexican tomatoes with green chilies, and the Sriracha. Let it simmer...
Then in a separate bowl, add the ricotta cheese, egg, 2 cups Monterey Jack cheese, chopped cilantro and chopped green onion, and salt and pepper. Mix the ingredients together.
Now let's put it together!
First add a cup of meat mixture into the bottom of a greased Casserole dish. Spread it out, and top with 3 Lasagna noodles. Then add a layer of the ricotta cheese mixture, and top with a layer of meat mixture. Continue layering: noodles, cheese mixture, then meat mixture. The last layer will be meat mixture! Then top the Lasagna with a cup of shredded cheese! Bake at 350 degrees for 30 minutes!
Isn't it beautiful?! And it tastes as good as it looks! I like to swerve mine with great tomatoes, and diced avocado, and a drizzle of Sriracha! I can't wait for you to try it! Let us know what you think of this different take on Lasagna?!
