Pumpkin Cookies with Cinnamon Frosting
If you're looking for a wonderful pumpkin cookie that is different from every other pumpkin cookie, this is it! This pumpkin cookie recipe will totally get you into the Fall season! My youngest daughter and her friends made these cookies the other night and they were so good...and did I tell you how good the frosting is. I could eat the frosting by the spoonful! Is this telling you I'm a sugar addict?! These cookies are too delicious not to share!
Here are the ingredients you will need:
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1/2 teaspoon of salt
1 1/2 cups granulated sugar
1/2 cup (1 stick), softened butter
1 cup of Libby's 100% Pure Pumpkin
1 large egg
1 teaspoon of vanilla extract
1 cup of White Chocolate Chips, optional
Here's what you do:
In a medium bowl, whisk the flour, baking soda, baking powder, spices and salt until combined. Set aside. In a bowl, I used my Kitchen Aid mixer fitted with the paddle attachment, cream together the butter until creamy. Add in the sugar, egg, pumpkin and vanilla extract. Add in the white chocolate chips, and Mix until blended together. Don't over beat. Then add your flour mixture just until blended.
Form the cookie dough into 2 inch balls, and place on a greased cookie sheet, or use a baking mat. Bake for 10 to 12 minutes.
Let the cookies cool down before you put on the yummy frosting, you don't want all that goodness to slide off!

2-3 tablespoons of milk
1 teaspoon of pumpkin pie seasoning
1/4 teaspoon of cinnamon
1/2 teaspoon of vanilla
You will love this wonderful recipe! I just wish you could have seen all the singing and dancing that went along with the making of these cookies! We wanted to take pictures of them, but they wouldn't let us, haha! Teenagers have way too much energy!
