Chicken Veggie Noodle Soup over Mashed Potatoes

Burrr! It's cold today! It feels like we are skipping Fall and going straight into Winter! So I'm excited to share my Chicken Veggie Noodle soup! It's my recipe, but I'm serving it how my Mom always serves her Chicken Noodle Soup, over Mashed Potatoes! It's different, but don't worry you're going to love it! It's a delicious soup, made even better with buttery mashed potatoes! It's comfort food at its best!

Ingredients:

1 rotisserie chicken, take meat off bones, and dice it

1 quart of broth, chicken, vegetable, or beef, whichever you have on hand!

1 packet of vegetable seasoning by Kerr

1 can of corn, with juice

2 cups of diced carrots

2 cups of diced zucchini

1/4 stick of butter

1 1/2 cups of Egg Noodles

1 teaspoon of minced garlic

Salt and pepper to taste

First saute the veggie in the butter. once they are softened , add in the rest of the ingredients! Let everything simmer until the noodles are ready!

Serve this soup over a pile of buttery mashed potatoes like my mom always did! Oh its So Good! What do you think?! Do you know anyone else that serves their soup over mashed potatoes?!
