Banana Muffin Top Cookies

Am I the only one out there who loves the top of muffins, but doesn't care for the rest?! If your like me, then your going to love my muffin top cookies!

What's fantastic about these, is they are a perfect grab and go breakfast! They also make a yummy treat that still has a healthy side. Drizzle a little bit of frosting on top, and grab a glass of chocolate milk! This is going to be good!

Ingredients for cookies-

1 cube of butter

1 Tbl. oil

1banana

1 C apple sauce

1 egg

2 tsp. vanilla extract

1/2 C sugar

1/2 C brown sugar

2 1/2 C flour

1 tsp. baking soda

1 tsp. cornstarch

1/4 tsp. salt

1-2 C white chocolate chips

1/3 C slivered almonds

Crumble top-

1 cube of butter

1 C flour

1/2 C brown sugar

1/3 C of oats

Icing-

1 Tbl. milk

1 C powder Sugar

1/2 tsp. banana extract

First mash your banana, and blend in your apple sauce. Mix this with your butter, oil, egg and sugar. Don't forget your vanilla extract!

Once that is all mixed, start adding in your flour, baking soda and cornstarch. I added white chocolate chips to mine to make them a little more enticing to my 3 year old. I also added some slivered almonds. They add extra texture to these muffin tops, that I really enjoy!

 Now comes the yummy crumble topping! I cant get enough of this stuff, and its simple to make too! Use your fork to mash the butter, flour, sugar, and oats. I always have to sample some of this, its just too good!

Sprinkle this on top of your cookies, and place them in the oven at 350 degrees for 10-12 minutes. Let them cool before you drizzle on the frosting! The frosting is optional, but it just really kicks it up an extra notch!

To make the frosting mix the milk, extract, and powder sugar with a fork, or hand blender. It's that simple! You don't have to use banana extract, but my little one loves it!

Here they are fresh out of the oven! I like to place some of them in a bag, to freeze for later! This makes them easy to grab, they are great for breakfast too!
